Brisbane Outdoor Wedding Locations Outdoor ceremony

A good friend of mine confessed to me once that she often day dreamed about getting married under the gazebo in Newstead Park, alongside the Brisbane River. A decade later all her friends and family stood by as she and her soon to be husband shared their vows. Truly it was a beautiful afternoon and it is for this reason that Newstead Park is a popular location. Following on from the ceremony, the reception was held at a restaurant at Portside, which is only a short car ride or a slightly longer walk away.

Maybe you already have a particular venue in mind for your reception that meets your catering needs, however the venue itself doesn’t quite provide a memorable location for your marriage ceremony, nor the requisite photo shots you are hoping for. Perhaps you know someone who has a beautiful garden and they are prepared to host your ceremony. Or possibly you are just looking to do something completely different, after all a ceremony on the beach at sunset really could be quite unforgettable. Whatever your preference or reasons, there are plenty of locations in Brisbane that cater for couples wanting to hold their marriage ceremony outdoors.

Planning tips:

  • If you are thinking of holding the ceremony and or reception in one of Brisbane’s Public Park, beached areas or nature reserve you will need to contact the Brisbane City Council or the relevant authority for permits and fees. In most Brisbane Council Parks that cater for weddings there is a designated area. Remember you will also be required to clean up after the ceremony as well, make sure a member or two of your wedding party is charged with this task in advance
  • This might be the outdoor location of your dreams, but in reality how easy and practical will it be for guests to reach. You want the day to be memorable for all the right reasons, rather than for missing/lost guests and traffic jams. Investigate in advance what type of public transport and parking options are available for your guests. In addition, following on from the ceremony will your reception be held locally and again will it be easy for guests to make their way to
  • Consider timing in particular during the summer months. Avoid holding the ceremony during the hottest part of the day, which is generally around 1pm onwards. If the outdoor location doesn’t offer a pergola, rotunda or something similar under which you can hold your ceremony, during your planning stages take a good look around and locate an ideal area where there is plenty of shading from trees for both you and your guests
  • If it is a particularly scenic spot allow time for guests to explore and enjoy the scenery and native wildlife after the ceremony. This and the travel time to your reception venue should be considered when you book your venue
  • The slogan is “beautiful one day, perfect the next”. In more recent years we can add “and totally unpredictable the day after that”.  If the weather on the day does is totally “unpredictable”, is there a contingency plan in place and are you happy with it?
  • Holding a ceremony or any event outside is fraught with all kinds of weather and native wildlife issues you may not have considered yet. What is the mosquito situation, particularly at sunset in summer? Are any native birds nesting, such as magpies? How many of your guests suffer from seasonal hay fever?
  • Remember if you want to hold your ceremony outside in a public spot you may have bystanders passively passing time watching your spectacle. If you feel uncomfortable about your day becoming a public affair, perhaps a park or beach is not quite for you, and that’s quite OK, however if you are a total exhibitionist then go and show off!

Recipe - Fresh Basil Pesto Pesto is one of those ingredients you can use in a multiude of recipes from a quick chicken and pesto sandwich on freshly baked bread, to a Moreton Bay Bug and creamy pesto fettucine.

When buying Basil try your local green grocer or farmers market as the freshness of the basil is very important in making the best pesto.

1 Bunch of basil - pick leaves from stalks

100grms pine nuts

4 Cloves of fresh garlic

150grms grated fresh parmesan cheese - pecorino if possible

250 mls extra virgin olive oil

Salt & Pepper

 

Place basil in blender  with gaflic and pine nuts, blend for 30 seconds, scape down the sides of blender and add parmesan, continue blending adding olive oil until you reach a semi smooth consistency, add salt and pepper, if pesto seems a bit dry add some more oil and blend.

Place pesto in storage container, will keep for approx a week in fridge.

Tip cover pesto in storage container with a thin layer of oil to help it from discolouring.

For a great treat at your next dinner party try making fresh Mayonnaise and finishing it with 2 tablespoons of pesto, use it on bruchetta with fresh tomato, or as a dip for fresh cut vegetables.
 
 
The Scoville Scale Test

Chillies are available consistently throughout Australia.  They vary in size, colour and intensity.  Chilli is a great addition to many recipes.  It can be difficult to determine how hot a chilli will be without practicing when cooking.   In 1912 American chemist Wilbur Scoville devised a test to rate the heat of chilli peppers.   This test is now known as the Scoville scale , where chillies can be rated on their heat and intensity.

Some common examples are;  

Capiscum is a zero on the Scoville scale

Jalapeno pepper is 2,500-5,000 Scoville

The Common Red/Green Cayenne pepper in Australia is 25,000-50,000 Scoville

Birds eye chili is 50,000-100,000 Scoville

From India the Bhut Jolokia is a whopping 850,000-1,100,000 Scoville

Roasting chilli on the bbq before using will leave a great extra taste to your recipe.


Experimenting with chilli can be a lot of fun, try slicing a Red Cayenne Chilli nice and fine then tossing it through a Mango and Prawn Salad.  The heat of the chilli and the sweetness of the mango works extremely well together.  The chilli will give the mango an enhances wonderful  flavour.

Adding extra sliced Green Chilli to you next Thai Green Cicken Curry will give it the bite you have been looking for.

Try blending fresh garlic, ginger, red chilli, oil and lemon juice until pureed, marinated sliced chicken breast for half an hour and cook on the bbq,  serve with fresh salad.
